Why do people buy spaghetti sauce?

Maybe I’ve watched too many episodes of Lidia’s Family Table. Anyhoo, I figured I’d make myself some sauce from scratch. Um, yeah, that was easy! It’s muy tasty too. Here’s how I did it. Serves 3-4.

  • smoosh a clove of garlic
  • chop up a small onion
  • heat up some olive oil in the bottom of a sauce pan. use enough to coat the bottom.
  • throw in the garlic and onion and let it get nice and almost translucent.
  • cut up 3 roma tomatoes into 6 to 8 pieces.
  • add a small can of tomato paste to the garlic, onion, and oil. allow it to caramelize a touch.
  • throw in tomoatoes and mix.
  • add enough water to cover the tomoatoes. stir.
  • add dried red pepper, oregano, salt, sugar, and rosemary to taste. also and a bay leaf. stir.
  • turn down the heat and simmer for about 15 min.
  • come back and stir and add in parsley.
  • let simmer another 15 min or until you’re ready to eat.
  • take out bay leaf and toss with pasta.
  • plate and add grated cheese.
  • enjoy!

The tomatoes will get smooshy but retain their shape. If you’re like me, you can smoosh them up in the sauce to cut down on the chunkiness. Otherwise, enjoy the chunks. :D
