new kitchen and easy spinach ravioli

I have a new kitchen! This is what it looks like:

In it, I can make things. Like spinach ravioli! Yum!

Recipe:

  • 16oz Ricotta
  • 4-6oz shreeded Mozarella
  • 4oz grated fresh Parmesan
  • 5-7 cloves roasted garlic (to taste)
  • 1 package frozen spinach, thawed and squeezed
  • 1-2 packages* of won ton wrappers

Makes 3 dozen.

Combine ricotta, mozzy, garlic and spinach in Tangerine Kitchen Aid mixer. Let it go until it’s good and mixed. It’ll smell realllllly good.

Get out the cookie sheets and lay out your wrappers. I was able to get a dozen on an air bake. Make little balls out of the cheese mix and place them in the center of your warpper.

Wet the perimiter of your bottom wrapper with water (I used my finger) and carefully stretch the top wrapper over your cheese mix and seal the edges. You can even smoosh the balls down a bit too.

Cook immediately or put them lightly covered in the fridge to cook later or to freeze. Total cook time is around 6 minutes. It’s hard to overcook them. I paired mine with Roasted Garlic and Herb Prego. It’s the best!

*I say 1-2 because I had a package of 60. To compensate, I ended up with a dozen or so of very FAT tortellini!
